Breakfast can be quick and nutritious. Try this breakfast on days when you don’t want a lot or aren’t that hungry. It at least gives you some protein and greens to get going, plus there’s no sugar. My favorite breakfast is 3 egg whites with spinach and a bowl of oatmeal with banana and 2 Tbsp. of peanut butter. But if I had a big dinner or at late or plan on a large lunch I like this alternative for a morning meal.
5 – Egg Whites
1 – Whole Egg
1 tsp. – Black Pepper
1 tsp. – Oregano
1 tsp. – Basil
1/2 c. – Spinach Fresh
1/2 c. – Kale Fresh
- Place a ban on the stove with a bit of water. Bring it to high heat and place the spinach and kale in the pan. Cover with a lid and steam. Turn off the heat and let the greens stay warm while you make the eggs.
- Spray a microwaveable container or bowl. In the container or bowl crack your egg and egg whites. Then put your spices on top. Place in the microwave for 30 sec. intervals as needed for a total of 2 – 3 min. to fully cook the egg mixture.
- Remove the eggs from the container using a spoon or simply flipping over your bowl. Place on a plate and add your side of greens. If you are on the go, leave it in the container and put your greens on top and cover with a lid. Breakfast is easy as 1, 2, 3.
