Need a lunch thats fresh, filling, and easy. This greek salad gives a good serving of vegetables and a healthy blend of oils and spice. And it’s traditional because, fun fact, real greek salads do not have lettuce or spinach in them. Just tomatoes, cucumbers, feta cheese, and sometimes peppers, onions and olives. This type of salad is nice and crunchy and great with olive oil and dressing. On another note, I love how the glass container I served this in made it look like the salad is just right on the table.
1/4 – Cucumber
1/2 – Small Tomato
1/4 – Green Bell Pepper
2 Tbsp. – Feta Cheese
1 Tbsp. – Olive Oil
1 Tbsp. – Rosemary and Garlic Vinaigrette with No Added Sugar (or similar Vinaigrette of your choice)
1 tsp. – Oregano
1 tsp. – Basil
- Chop up your veggies and place them in a bowl or container.
- Add in the feta cheese, pour the oil and dressing in, and add the spices.
- Put a lid on it or cover with a plate or tinfoil. Shake it up for a perfectly coated greek salad. If you add some simple hard boiled eggs it makes a great lunch to go or for the office.
